Poached Salmon

Ingredients

12 ounces center-cut wild salmon

2 quarts olive oil

Salt and freshly ground black pepper

1 sprig thyme

1 clove garlic

Fleur de sel

1 cup micro greens

Directions

  1. Cut salmon into 4 (3-ounce) portions. Heat olive oil to 95 degrees F. Add thyme and garlic. Season the salmon with salt and pepper. Place in olive oil for 8 minutes. Remove from olive oil. Season with fleur de sel. Garnish with dressed micro greens.
