Polynesian Sweet and Sour Fish: L'a Momona a Paakai

Ingredients
1 ounce ginger root, peeled and minced
4 ounces mirin
1 ounce soy sauce
2 1/2 pounds mahi-mahi, cut into 1/2-inch cubes
Oil, for frying
Batter:
7 ounces flour
7 ounces water
3 ounces soy sauce
1 teaspoon sugar
2 eggs
1/2 teaspoon baking soda
1 teaspoon garlic powder
Seasoned flour, as needed
20 ounces sweet and sour sauce
Directions
- Combine ginger, mirin, and soy sauce and marinate the fish for 30 minutes. Preheat oil in a deep-fryer to 350 degrees F.
- Mix together batter ingredients.
- When preparing an order, drain and dredge fish cubes in seasoned flour. Coat fish with the batter and deep-fry until golden brown.
- In a bowl, gently toss one portion of fried fish with 4 ounces of hot sweet and sour sauce. Serve immediately on a warmed dinner plate.
