Polynesian Sweet and Sour Fish: L'a Momona a Paakai

Ingredients

1 ounce ginger root, peeled and minced

4 ounces mirin

1 ounce soy sauce

2 1/2 pounds mahi-mahi, cut into 1/2-inch cubes

Oil, for frying

Batter:

7 ounces flour

7 ounces water

3 ounces soy sauce

1 teaspoon sugar

2 eggs

1/2 teaspoon baking soda

1 teaspoon garlic powder

Seasoned flour, as needed

20 ounces sweet and sour sauce

Directions

  1. Combine ginger, mirin, and soy sauce and marinate the fish for 30 minutes. Preheat oil in a deep-fryer to 350 degrees F.
  2. Mix together batter ingredients.
  3. When preparing an order, drain and dredge fish cubes in seasoned flour. Coat fish with the batter and deep-fry until golden brown.
  4. In a bowl, gently toss one portion of fried fish with 4 ounces of hot sweet and sour sauce. Serve immediately on a warmed dinner plate.
