Potato Fans

Ingredients

3 tablespoons butter

1 clove garlic, minced

2 tablespoons finely chopped parsley

salt & pepper

4 medium Idaho potatoes

Directions

  1. Preheat oven to 400 degrees. In a small sauce pan melt together the butter, garlic, and parsley. Peel each potato and cut each potato crosswise into 1/4" slices without slicing all the way through the potato. Place potatoes in baking dish and drizzle with butter mixture. Bake for 1 hour or until golden, crispy and the potatoes have fanned out. Serve hot.

4 stars because of prep info. <br />Additional prep Info...<br />1. The potato can be idaho or sweet<br />2. Either can be peeled or not...just clean<br />3. Slicing the raw potato...cut a thin slice off bottom and then each end. Put the potato on a cutting board BETWEEN CHOPSTICKS. The chopsticks prevent from slicing down too much per slice...keeps the potato whole<br />4. Pre-bake prep...pastry brush into oil...try to oil inside of each cut...then outside<br />5. Bake...per temp and time as typical recipes suggest <br />Personally, just before serving, sprinkle top of each baked potato with cooked n crumbled fresh bread crumbs or bacon bits...cold cheese or brown sugar...bake in oven 2-3 mintes.<br />Annie, Fremont, CA<br />.
