Proper Geechee Rice

Ingredients

1 part long-grain white rice

2 parts water

Directions

  1. Rinse the rice until the water runs clear. In a heavy saucepan over high heat, combine the rice and water and cover with the lid ajar. Bring the water to a boil, shift the lid so that it covers the pan tightly, turn down the heat to very low, and cook for 20 minutes until the rice is tender and the liquid is absorbed. Never stir the rice during this time. Don't even uncover the pot to peek. Remove from the heat and let rest for 10 minutes before serving. Your rice will be proper.

Yes, this is the perfect way to make southern style, long grain white rice, although they left out the SALT! Wow, I can't imagine eating that without salt! Also, minor error in the transcription; it says 50 minutes at the top under cooking time, and if you look below in the description of how to prepare the rice, you only cook it 20 minutes, not 50. Of course, this recipe is exactly what it says to do on the rice package, so nothing new, but it's nice to see that a chef agrees with the package directions!
