Pumpkin Patch Surprise

Ingredients

2 1/2 cups diced fresh pumpkin (about 1/2 a small pumpkin), seeds and skin removed

1/2 teaspoon pumpkin pie spice/ground mixed spice

Juice of 1 lime

2 to 3 tablespoons maple syrup, to taste

2/3 cup milk (or any dairy free milk)

Ice cubes

Hot pepper sauce, such as Tabasco, to serve, optional

Directions

  1. Put the diced pumpkin and spice in a saucepan, just cover with water, and heat until simmering. Cook gently for 10 minutes until the pumpkin is tender. Drain through a sieve and leave to cool a little.
  2. Transfer to a food processor or blender and add the lime juice, 2 tablespoons of the maple syrup and the milk. Blend until completely smooth. Taste for sweetness, adding a little more maple syrup if you like.
  3. Pour into two glasses, add several ice cubes to each, and sprinkle with hot pepper sauce if you like very spicy flavors.
