Balsamic Glazed Grilled Plums with Vanilla Ice Cream

Ingredients

4 ripe plums, California red or dark skinned, halved and pitted

Extra-virgin olive oi , for drizzling

1/2 cup balsamic vinegar

1 tablespoon brown sugar

1 teaspoon vanilla extract

1 tablespoon lemon juice

1/4 teaspoon ground black pepper

1 pint vanilla bean ice cream

Directions

  1. Preheat a grill pan to high heat. Drizzle fruit with oil to keep it from sticking and grill plums 3 minutes on each side.
  2. While fruit is grilling, pour balsamic vinegar into a small pot and place pot over medium high heat. When vinegar heats to a boil, reduce vinegar by half, 1 to 2 minutes.
  3. Combine sugar, vanilla and lemon juice and pepper in a small bowl. Whisk in warm balsamic vinegar.
  4. Place hot, grilled fruit on dessert plates. Drizzle the balsamic glaze over fruit and serve.

I used only the balsamic recipe and it was awesome!! I made a healthier version of the recipe (by keeping the fruit raw, using all organic ingredients, and using coconut milk ice cream instead of dairy. I first put some Coconut Bliss brand ice cream (Vanilla Island flavor in a bowl. Then I put some mostly thawed frozen blueberries and strawberries on top of the ice cream. I then spooned a bit of the vinegar mixture on top and it was AMAZING!! I will be making this over and over for a delicious gourmet treat!!
