Cajun Mashed Potatoes

I like mashed potatoes that are simple and gloriously creamy, but it’s fun to kick them up with homemade Cajun seasoning. Get yourself a potato masher if you don’t have one — it’s life-changing.

Ingredients

For the Cajun Seasoning:

2 tablespoons garlic powder

2 tablespoons paprika

1 teaspoon cayenne pepper

Kosher salt and freshly ground pepper

For the Potatoes:

5 pounds Yukon Gold potatoes, peeled and cut into chunks

2 sticks salted butter, at room temperature

1 8-ounce package cream cheese, at room temperature

1 cup heavy cream

1/2 to 1 teaspoon seasoned salt, such as Lawry’s

Kosher salt and freshly ground pepper

Directions

  1. Make the Cajun seasoning: Combine the garlic powder, paprika, cayenne and 2 tablespoons each salt and pepper in a large bowl.
  2. Make the potatoes: Bring a large pot of water to a simmer and add the potatoes. Bring to a boil and cook until fork-tender, 20 to 25 minutes.
  3. Drain the potatoes in a large colander. Place them back into the dry pot and put the pot on the stove. Mash the potatoes over low heat, letting the steam escape.
  4. Turn off the heat before adding the butter, cream cheese, heavy cream and 1 tablespoon of the Cajun seasoning (reserve the rest for another use). Mash, mash, mash! Next, add the seasoned salt and 1/2 teaspoon each salt and pepper; mash.
  5. Place the lid on the pan to keep the potatoes warm until you are ready to serve.
