Holiday Mystery Rolls

Ree’s mom used to make mystery rolls back in the 1970s. The original recipe used butter, garlic powder and blue cheese, but Ree has given the dish a more contemporary feel by adding fresh garlic, pesto and Parmesan to the butter.

Ingredients

1 stick (8 tablespoons) salted butter

2 tablespoons chopped rosemary

4 cloves garlic

4 tablespoons pesto

One 16.3-ounce can flaky biscuits

1/2 cup grated Parmesan cheese

Basil leaves, to garnish

2 cups jarred marinara, warmed

Directions

  1. Preheat the oven to 350 degrees F.
  2. Add the butter, rosemary, garlic and 2 tablespoons of the pesto to a baking sheet. Place in the oven until the butter has melted, 2 to 3 minutes.
  3. Meanwhile cut the biscuits into quarters.
  4. Remove the baking sheet and add the quartered biscuits. Toss to fully coat.
  5. Bake until golden, 10 to 12 minutes.
  6. Remove from the oven and add the remaining pesto and the Parmesan to the pan. Toss to coat and transfer to a serving platter. Garnish with the basil and serve with the warm marinara on the side.

There is potential here, but too much butter made the biscuit bites a bit soggy. I may try the recipe again with less butter. Also, it took closer to 15 minutes for the biscuits to brown.
