Holiday Roll Ups

Ingredients

2 packages cream cheese, softened

1 package ranch dressing mix 

Freshly ground black pepper 

5 flour tortillas 

1/2 cup finely diced green bell peppers 

1/2 cup finely diced red bell peppers 

2 green onions, sliced 

Directions

  1. Mix the cream cheese, ranch dressing mix and the black pepper together thoroughly.
  2. Spread the mixture on the tortillas, and then sprinkle over the diced bell peppers and green onions. Roll up tightly, wrap in plastic wrap and refrigerate until party time (for at least 1 hour).
  3. Slice into small wheels and serve.

I halved the recipe to test it out before bringing it to a gathering. I used 1/2 c each cream cheese and Neufchâtel. I used 1/2 package ranch dressing mix, 1/2 c red, yellow and orange peppers, 1 green onion, and 2 1/2 10” tortillas. I thought there was too much filling, they were soggy, and a little bland. <br />The second time I made them, I placed the peppers on paper towels to absorb excess moisture after finely dicing them, added 2 strips crispy bacon chopped fine, and tried to roll them more tightly, using 4 10” tortillas. They’re chilling now. I’ll let you know how they came out.
