Ingredients
2 slices thick-cut bacon
1 burger patty (from the butcher)
1 tablespoon fajita seasoning
3 tablespoons mayonnaise
2 teaspoons hot sauce
Zest and juice of 1 lime
1/2 avocado
1 tablespoon chopped fresh cilantro
Kosher salt and freshly ground black pepper
1 potato bun
One 1/4-inch slice queso fresco
1 small jalapeño, seeded and diced small
1 fresh pineapple ring
Directions
- Heat a cast-iron skillet over medium heat. Fry the bacon until crisp, 6 to 7 minutes. Remove the bacon to a paper towel-lined plate and halve the slices. Remove all but 1 tablespoon of fat from the skillet and return the skillet to the heat.
- Sprinkle the burger patty with the fajita seasoning. Cook in the skillet until lightly charred on the edges, 4 to 5 minutes per side for medium. Remove the skillet from the heat.
- Meanwhile, mix the mayonnaise, hot sauce and the zest of the lime in a small bowl. Set aside. In a separate bowl, mash the avocado. Add the cilantro and lime juice, then season with salt and pepper. Mix and set aside.
- To build the burger, spread the spicy mayo on both the top and bottom of the bun. Layer the patty on the bun bottom, followed by the cheese, guacamole, jalapeño, pineapple ring and bacon. Top with the other half of the bun and serve with your favorite potato chips or other burger side.
