Roasted Brussels Sprouts

Ingredients

2 pounds brussels sprouts, washed and trimmed, large sprouts halved

1 head garlic, cleaned

1 tablespoon fresh thyme leaves

1/4 cup olive oil

Kosher salt

Freshly ground black pepper

Directions

  1. Preheat oven to 350 degrees F.
  2. Put Brussels sprouts, whole garlic cloves, thyme, and olive oil together in a bowl. Toss to combine, and season with the salt and pepper, to taste.
  3. Empty the bowl onto a shallow baking pan and roast until tender and edges just start to brown, about 35 minutes.

this dish came out excellent. i think the recipe underestimated the cook time. i had to put foil over mine to let it steam a little. the garlic really adds a nice touch to the brussels. half way through the cooking i would drizzle with more olive oil and toss it a little. it was a little difficult getting it to cook without putting the foil over it and letting it rest for about 5 minutes.
