Barbecue Sauce

Ingredients

1/4 cup unsalted butter

1 cup medium diced onions

2 teaspoons chili powder

2 teaspoons garlic salt

2 teaspoons paprika

3 cups ketchup

1/2 cup molasses

1/4 cup honey

1/4 cup English mustard

1/4 cup apple cider vinegar

1 tablespoon Worcestershire sauce

Directions

  1. In a large pot, melt half of the butter on medium heat. Add the onions and sweat until the onions are translucent, 3 minutes. Add the chili powder, garlic salt and paprika, and saute for 2 minutes. Add the ketchup, molasses, honey, mustard, vinegar and Worcestershire sauce. Bring the sauce to a boil then reduce to a simmer and cook for 5 to 10 minutes, stirring frequently.
  2. Transfer the sauce to a blender or use an immersion blender and blitz, leaving some texture to the sauce. Fold in the remaining butter.

Like this sauce, however, it is very mustard forward. If you do not like the mustard intensity simply cut the amount of mustard in half. That will give you a rich tangy BBQ sauce that you will enjoy. The mustardyness is greatly reduced when it is on the food as opposed to tasting it alone.
