Buffalo Chicken Wings

Ingredients

Wings:

2 pounds chicken wings

2 tablespoons grapeseed oil

1 tablespoon salt and pepper, equal blend

Sauce:

2 sticks (1/2 pound) butter, softened

1/4 cup hot sauce, such as Frank's

2 tablespoons honey

1 teaspoon celery seed

1 teaspoon kosher salt

Directions

  1. For the wings: Preheat the oven to 200 degrees F. Toss the wings with the oil and the salt and pepper blend. Place on a sheet pan. Cook for 90 minutes. After cooking, remove the wings from the oven and cool for 30 minutes or more.  
  2. For the sauce: In mixing bowl, blend the butter, hot sauce, honey, celery seed and salt until well mixed. 
  3. Preheat a fryer to 375 degrees F. Add the wings to the fryer and cook until crisp, 2 to 3 minutes. Once crisp, remove from the fryer and allow excess grease to drain. Toss the wings in the hot sauce and serve.

I don't really see the appeal to the sauce. I really was thinking there might be a typo in the online recipe, because there just seems to be way too much butter for the amount of sauce. The celery seed helps the flavor, but overall, it's just way too weak. I doubled the Frank's sauce and added a little pureed habanaro and garlic (and doubled the amount of wings for the oversupply of sauce, and it now it's good. Frankly, I've made better sauce just using a mix of 4-5 peppers of various heats, roasted garlic, and a few other spices just thrown in--and, at most, a stick of butter.
