Ingredients

Oil, for searing

Two 3-ounce fillets mahi mahi

1 tablespoon blackening seasoning 

2 sweet rolls, such as King's Hawaiian

Butter, for toasting

2 ounces Sriracha mayonnaise 

Shredded lettuce, for topping

Lemon juice, for seasoning

Freshly ground black pepper

Store-bought or homemade caper tapenade, for topping

Pickled onions, for topping

Directions

  1. Heat a pan with some oil over hot heat. Dry the fillets with paper towels. Liberally sprinkle the blackening spice on one side of the fillets and place seasoned-side down in the pan for 3 minutes. Flip the fillets and sear until cooked through, 3 minutes more.
  2. Toast the rolls in melted butter until brown. Spread some Sriracha mayonnaise on the tops and bottoms of the rolls. Season some lettuce with lemon juice and pepper. Place a fillet on each bottom half of the rolls, and add some tapenade, seasoned lettuce and pickled onions, then finish with the top of the roll to serve.

Cook’s Note

To make caper tapenade, mix equal parts chopped capers, onions, tomatoes, garlic and green olives.

Made this with different ingredients but they looked just alike and tasted amazing. Thanks for the inspiration to think outside the box!! I love all you guys and gals on FN and love watching all the shows. <br />Robert if I had a little place I would definitely put something like this on the menu. A dream I’m afraid will never come true for me. I’ve worked in the restaurant industry my whole life and at the same one now for 33 years. <br />This doesn’t give the option to picture but they really did look like yours.
