Rice Pilaf

Ingredients

1/4 cup olive oil

1 medium onion, finely chopped

2 cloves garlic, finely chopped

2 cups white rice

1 quart chicken stock

1 teaspoon poultry seasoning

Directions

  1. Heat olive oil in a medium saucepan and saute onion and garlic until the onion begins to turn translucent. Add rice and stir to coat with oil, onions and garlic, and let rice "toast" lightly. Stir in chicken stock and poultry seasoning and bring to a boil. Then reduce heat and simmer covered until all liquid is absorbed, about 20 minutes. Remove from heat and flake rice.

This is a great easy side when you want something with a little more oomph than plain white rice - I made a half recipe (feeding 2) following all the instructions but I did add a little Kosher salt, served it with herbed ritz cracker and panko crusted cod (thanks, Ina Garten) and green beans - it really balanced out the meal.
