Ingredients

1 head broccoli, cut into florets

1 pound fresh asparagus, tough ends snapped off or sliced off

1 tablespoon olive oil

1 tablespoon butter

1 red onion minced

2 carrots, peeled and sliced julienne

1 red bell pepper, stems and seeds removed and sliced julienne

1 tablespoon minced fresh parsley leaves

1 tablespoon minced fresh tarragon leaves

1 pound green beans, blanched

1 teaspoon cayenne pepper

Directions

  1. Steam the broccoli and set aside covered in a warm place. Then begin steaming the asparagus until fork tender, remove from heat and keep warm.
  2. While the broccoli and asparagus are steaming, heat the olive oil and butter in a large skillet over medium heat.. Saute the onion until translucent and add the carrots. When the carrots begin to soften, add the red bell pepper, parsley and tarragon and continue cooking until the bell pepper is tender. Fold in green beans. Season with cayenne pepper and salt.
  3. Arrange asparagus and broccoli on serving dish and spoon rest of vegetable mixture over.

Another fantastic recipe from Robert! <br />Served with:<br />Robert's Roasted Chicken (the one with oranges<br />Emeril's Yorkshire Puddings (the one in the muffin tins<br />My edits:<br />I didn't have all the veg on hand, so I just did the steamed broccoli as instructed, the onions with a few cloves of garlic, and a load of carrots, but sliced on the bias rather than julienne. All seasoning and cooking as stated. So very good. I will be trying the recipe as written soon, I do love the other veggies listed and I am sure it will be great.<br />Enjoy!
