Penne Rustica

Ingredients

1/4 cup chopped fresh basil leaves

1/4 cup grated Parmesan

Salt

Freshly ground black pepper

1 pound penne pasta

Cooked chicken, cut into 1-inch pieces

1/2 cup jarred artichoke hearts, quartered

Cooked zucchini, cut into 1-inch pieces

1 cup chopped roasted red peppers

1/2 cup chopped oil-packed sun-dried tomatoes

3 roasted Roma (plum) tomatoes, diced

1/2 cup sliced pimento-stuffed green olives

Directions

  1. Cook penne according to package directions. Drain and transfer to a large bowl. Stir in chicken and remaining ingredients.

Mama_the_Home Chef

This turned out fantastic! I seasoned my chicken with S&P and Italian seasoning and then sauteed in olive oil along with the sundried tomatoes. Just before the chicken was completely cooked I added the zucchini with some garlic and red chili flakes. When the zucchini was almost cooked I added a can of diced tomatoes since I didn't have roma tomatoes and the rest of the ingrediants. I simmered for about 11 minutes as the pasta cooked and then tossed everything together with some grated pecorino romano.
