Balsamic Melon Salad

Ingredients

4 cups packaged melon medley, cut into bite-size pieces (recommended: Ready Pac)

2 tablespoons extra virgin olive oil

2 teaspoons balsamic vinegar

1 teaspoon freshly cracked black pepper

1/2 teaspoon chili seasoning

2 teaspoons freshly chopped basil leaves, about 4 leaves

Directions

  1. In a large bowl, toss together all ingredients except basil. Place in serving bowl and garnish with basil.
  2. Serve chilled or at room temperature.

I made a version of the recipe just now before I even read this recipe! I had my bowl of cantaloupe. I’m like let’s put some balsamic on it. Well, that tastes good, let’s try some seasoning salt. So I have this Himalayan pink seasoning, salt, mixed with chili flakes, and other herbs. It’s not real spicy and I just used a sprinkle over the melon. Taste buds are popping! I need to go change my pants! I’ve never had anything so good in my life, I can’t wait to cut up a melon and add it to my next salad. I’ve eaten all kinds of fruit with my salad, and used all kinds of vinaigrettes and homemade dressings. Including strawberries, blueberries, apples, oranges, grapes, and now I will add melons. I’m not sure if I would add watermelon, mostly because it’s a lighter texture, and I think the more salad, cantaloupe and honeydew’s will hold it hold up better.
