Cranberry and Orange Wild Rice

Ingredients

1/2 cup dried cranberries

1 1/4 cups water

1 cup fresh orange juice

1 tablespoon unsalted butter

1 (8-ounce) package long-grain and wild rice (recommended: Uncle Ben's)

1 orange, zested

1/2 cup sliced almonds

Directions

  1. Put cranberries in a medium bowl and pour in enough hot tap water to cover. Set aside while you make the rice.
  2. In a medium pot over medium-high heat, add the water, orange juice, and butter, and bring to a boil. Stir in the rice, and the included contents of the seasoning packet, and return to a boil. Turn the heat to low, cover, and cook until the rice is tender, about 20 to 25 minutes. Drain the cranberries and add them to the rice along with the orange zest, and almonds. Gently stir them in, fluffing the rice. Transfer the rice to a serving bowl, cover and keep warm until ready to serve.

It's pretty and it tastes good. I read the two other reviews first, so I went easier on the orange zest at first, but then I ended up adding more, about 3/4 of the zest. I loved the cranberries and I put a handful of dried cranberries on the top, which was great because they have a nice chew to them. I could even see putting some orange segments in this dish as well.
