Macadamia-Coconut Cookie

Ingredients

1 package sugar cookie mix

1 egg

1 stick butter, melted

3/4 cup flaked sweetened coconut

1/2 cup chopped macadamia nuts (recommended: Mauna Loa)

Directions

  1. Preheat oven to 375 degrees F. 
  2. In a large mixing bowl, combine all ingredients for cookies. Stir until soft dough forms. 
  3. Drop cookie dough by tablespoonfuls onto ungreased cookie sheet. Bake for 10 to 14 minutes or until edges are light golden brown. Remove from oven and cool 1 minute.

Made this cookie with unsweetened coconut for the holidays and they were so good.I think they would be too sweet with sweetened coconut.Very easy to make and a "special"little taste treat.Now my family wants them all year round.I had no problem with them spreading out to much like some reviewers.
