Seared Filet Mignon

Ingredients

6 slices Filet Mignon, each about 1/2 pound and cut about 1 1/2 inches thick

Salt and pepper

1/3 cup (6 tablespoons) butter

1 1/2 tablespoons olive oil

Directions

  1. Season the Filet Mignons with salt and pepper. Combine the butter and oil in a large saute pan over high heat. When the pan is hot and foam has subsided, add the beef. Sear for three minutes per side for rare. Transfer to a warm platter.

Have made this several times I do add some thyme to the cast iron with the butter and chopped garlic<br />For my son I top his steak with store bought truffle butter i have a dairy allergy so I use plant butter until I plate and then I use the real stuff on his.<br />118 temp let rest perfectly med rare.<br />If I happen to have mushrooms, I will saute and serve with my filets.<br />Never a bite left.<br />
