Spiced Fruit and Nut Granola

Ingredients

2 cups old-fashioned rolled oats

1/3 cup wheat germ

2 tablespoons Truvia™ natural sweetener spoonable*

2 teaspoons pumpkin pie spice

1/4 teaspoon Diamond Crystal® kosher salt

2 tablespoons vegetable oil

2 tablespoons walnut oil

1/2 cup blanched almonds, coarsely chopped

1/2 cup dried apricots, chopped

1/4 cup dried dates, chopped

1/4 cup golden raisins or dried figs, chopped

Greek Yogurt, serving suggestion

*May substitute with 7 packets Truvia™ natural sweetener

Directions

  1. 1. Preheat the oven to 325 degrees F. In a medium bowl combine the oats, wheat germ, Truvia™ natural sweetener, pumpkin pie spice and salt. Add both oils and toss well to coat. Spread in a single layer on a parchment lined baking sheet. Bake until toasted, about 10 minutes. Stir in almonds and continue to bake until the nuts are toasted and the granola is dry, about 10 more minutes.
  2. 2. Remove from the oven, stir in the apricots, dates, and figs or raisins. Cool on the baking sheet. Serve over yogurt as desired. Store granola in a sealed container for up to 2 weeks.
