Spinach with Mustard Vinaigrette

Ingredients

1 teaspoon or so Dijon mustard

4 tablespoons vegetable oil

2 tablespoons olive oil

2 tablespoons red wine vinegar

Salt and pepper

1 bunch spinach

Directions

  1. In a small bowl whisk together all vinaigrette ingredients. Toss with spinach leaves.
