Stuffed Pumpkin

Ingredients

1 (3 to 4) pound pumpkin

1/2 teaspoon salt

1/2 teaspoon cinnamon

Directions

  1. Preheat oven to 350 degrees F.
  2. Cut stem section from the pumpkin and remove seeds. Sprinkle inside with salt and cinnamon.
  3. Place hollowed pumpkin on a baking sheet in oven and roast for 20 minutes. Remove and fill with cornbread dressing (recipe follows) leaving 1 to 2 inches at the top for expansion.
  4. Increase oven temperature to 375 degrees.
  5. Place stuffed pumpkin in oven and bake for another 35 to 40 minutes or until pumpkin is tender, dressing is set and nicely browned on top.

recipe for cornbread stuffing did not follow the recipe, but found mr aikins "mamas cornbread" recipe on your site to work great. family loved it and made the table look great too.
