Sunny's Easy 4-Ingredient Pulled Pork

Ingredients

One 4- to 5-pound boneless pork shoulder (Boston butt), fat cap removed

Kosher salt and freshly ground black pepper 

2 tablespoons ground cumin

Two 15.5-ounce jars salsa (mild, medium, or hot, however you like it) 

1/2 cup peanut butter 

Garlic Mashed Potatoes, for serving, recipe follows

Garlic Mashed Potatoes :

1/2 stick (4 tablespoons) unsalted butter

2 cloves garlic, minced 

One 24-ounce package prepared Yukon gold garlic mashed potatoes, preferably Good & Gather 

2 scallions, thinly sliced

Directions

  1. Sprinkle the pork butt generously with salt, black pepper and about a tablespoon ground cumin. Place in a slow cooker.
  2. In a medium bowl, whisk together the salsa, peanut butter and remaining tablespoon cumin. Pour into the slow cooker over the pork butt. Cook on low for 8 hours, or until fork tender.
  3. Remove the pork butt from the slow cooker and shred with 2 forks. Serve in bowls over the Mashed Potatoes, topped with a ladle of the cooking liquid from the slow cooker.

Garlic Mashed Potatoes :

  1. Add the butter to a medium pot and place over medium-low heat. Once melted, add the garlic and cook until the garlic flavor is infused into the butter, 2 to 3 minutes. Add the mashed potatoes and mix to combine. Cook until the mashed potatoes are heated through, about 5 minutes. Top with the scallions and serve.

Made this last week for a family celebration—instead of mashed potatoes we served on hawaiian roles with coleslaw (oil &amp; vinegar dressing). No one, I mean on one could guess the ingredients!<br />Everyone loved the flavors and said they were making this pulled pork recipe in their kitchen!
