Sunny's Easy Banana Brûlée Fool

I love a good banana pudding, and I think making a fool and layering in the cookies is the fastest way to get the flavors without all the work. A fool is simply a dessert layered with fruit and whipped cream. I make the whipped cream sturdy by adding in some mascarpone, but you don't need it if you're serving it right away. The mascarpone helps this fool keep in the fridge longer for a late-night snack.

Ingredients

4 very yellow bananas (no brown), sliced into 1/2-inch rounds

1 tablespoon granulated sugar, plus more for dusting

8 ounces mascarpone, at room temperature

1 cup heavy cream

1/2 teaspoon vanilla extract

Kosher salt

16 butter cookies

Directions

Special equipment:
nonstick aluminum foil
  1. Place the banana slices on a baking sheet lined with nonstick aluminum foil. Dust with sugar and place under the broiler until the sugar caramelizes (or use a kitchen torch). Remove and set aside.
  2. In a large bowl or stand mixer, add the mascarpone and heavy cream. Whip until fluffy, then add the sugar and vanilla with a pinch of salt and continue to whip until smooth, but firm.
  3. Crumble all but 4 of the cookies. In sundae or serving glasses, add some crumbled cookies to the bottom, then a few banana slices, then some of the whip, and repeat until you get to the top. Add a couple of slices of banana and a whole cookie to the top of each. Chill until ready to serve.
