Sunny's Nacogdoches Cherry Limeade

  • Level: Easy
  • Yield: 4 to 6 drinks
  • Total: 1 hr 25 min (includes cooling time)
  • Active: 15 min
My first paid job was down the street from my high school in San Antonio, TX, as a car hop at a burger chain. Friday night lights were a reality; after the game we were packed with students and parents ordering burgers, onion rings and our top drink, a cherry limeade. Cars would line up on Nacogdoches Road to pull into the lot, so I've aptly named this nostalgic drink that. It is still available at this burger joint nationwide.

Ingredients

Syrup:

3 cups cherries, pitted and chopped

1 cup granulated sugar

Drink:

Pellet ice cubes or crushed ice

48 ounces lemon-lime soda

2 to 3 limes, halved

8 to 12 maraschino cherries

Directions

Special equipment:
Pellet ice cube trays
  1. For the syrup: In a small saucepan over medium heat, add the cherries and 1 cup water. Cook and mash the cherries, using a potato masher while they cook, about 5 minutes, then add the sugar and cook until the sauce is reduced and thickened, 20 to 25 minutes. Strain out the cherries and cool completely.
  2. For the drink: Fill 4 to 6 glasses to the brim with ice and add enough soda to fill each three-quarters of the way. Top each off with the cherry syrup, then a hefty squeeze of lime and 2 maraschino cherries.
