Super Duper Chicken Nuggets

Ingredients

1 to 2 cups vegetable oil

Bread crumb mixture:

3 to 4 cups bread crumbs

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon freshly ground black pepper

1/2 tablespoon white pepper

1/2 tablespoon cayenne pepper

1 tablespoon thyme

4 to 6 boneless chicken breasts

1 cup all-purpose flour

2 to 4 eggs, beaten

Directions

  1. Add the vegetable oil to a deep skillet and preheat to 350 degrees F.
  2. For the bread crumbs:
  3. Combine the bread crumbs, garlic powder, onion powder, black pepper, white pepper, cayenne pepper and thyme in a large bowl. Set aside.
  4. Slice the chicken into 1/2-inch strips. Don't forget to remove the cartilage from center of breast. Place the flour and eggs into separate bowls. Cover each strip evenly in flour, then submerge strips in the eggs, to coat well. Let excess egg drip off, and then coat with the bread crumb mixture. Fry strips in hot oil until golden brown. Remove from fryer, drain on paper towels and serve.

Yum! My daughter decided she wanted chicken nuggets, and these were perfect! I added 1 tablespoon of kosher salt to the breadcrumb mixture and a sprinkle of salt in the flour, and left out the white and cayenne peppers. I used 6 chicken breasts and three cups of the breadcrumbs, and I had A LOT of breadcrumb mixture left...next time I will cut it by 1/3.
