Texas Cheesesteak Grilled Cheese

Ingredients

1 Vidalia onion, thinly sliced

1 poblano pepper, thinly sliced

1 tablespoon oil

Salt and ground black pepper

4 slices French Pullman bread (cut 3/4-inch thick)

1 stick (8 tablespoons) European style butter, at room temperature

2 tablespoons garlic mayonnaise

8 slices American cheese, preferably New School

2 smoked brisket slices (from your favorite BBQ joint), diced

4 slices cooked bacon

Directions

Special equipment:
an electric griddle
  1. Saute the onions and peppers in a hot skillet with the oil until golden brown. Season with salt and pepper.
  2. Preheat a griddle over moderately-low heat to 350 degrees F.
  3. Brush one side of each bread slice with the butter. Place the bread on a plate buttered-side down. Spread the inside of the bread with the garlic mayo. Top each slice of bread with the American cheese. Layer the onion and pepper mixture on the cheese and top with the brisket. Close the sandwiches butter-side up.
  4. Set the sandwiches on the hot griddle. Cook until golden brown, about 5 minutes. Flip the sandwiches with a spatula, then cook until golden brown and the cheese is fully melted, another 5 minutes. Cut the sandwiches in half diagonally and serve hot.
