Tomato Cucumber and Feta Salad

Ingredients

2 tomatoes, cored and sliced

1 1/2 cucumbers, peeled, seeded and sliced

Salt and pepper

2 tablespoons red wine vinegar

3 tablespoons olive oil

1/2 cup feta cheese, crumbled

Directions

  1. In medium bowl combine tomatoes and cucumber. Season with salt and pepper. Add vinegar and olive oil. Toss to coat. Sprinkle on feta and serve.

I used lemon infused olive oil in place of the regular olive oil and it took it over the top in fresh tasting!  But I only used half of the oil it called for, that was enough. I, too, put in some red onion...a lovely summer salad, will definitely be having this lots this summer in our house!
