Blue Cheese Cole Slaw

Ingredients

3/4 cup mayonnaise

1/2 cup sour cream 

1/4 cup crumbled blue cheese 

2 tablespoons apple cider vinegar

Salt and freshly ground black pepper

1/2 medium green cabbage, cored, quartered and thinly sliced 

1/2 small red cabbage, cored, quartered and thinly sliced 

1 Vidalia onion, halved lengthwise and cut crosswise into 1/4-inch slices 

Directions

  1. In a large bowl, mix together the mayonnaise, sour cream, blue cheese, vinegar and some salt and pepper and stir until well combined. Add the cabbage and onions and toss to combine. Cover and refrigerate until serving.

This is an amazing cole slaw! The dressing is outstanding and it turned some slightly old and wilted cabbage in my refrigerator into a delightful salad. I used mine as a topping for a hamburger and it was great. I LOVE cole slaw and my husband loves blue cheese so this will be a staple in our salad rotation for sure!!
