Southern Green Beans

Ingredients

1 tablespoon vegetable oil

8 ounces country ham, ripped into small shards 

1 1/2 pounds green beans, trimmed and halved 

2 1/2 cups low-sodium chicken stock 

1/2 teaspoon freshly cracked black pepper 

1/2 teaspoon kosher salt 

Directions

  1. Place a large nonstick skillet over medium heat. Pour in the vegetable oil. Spread the ham in the skillet in a thin layer. Cook, stirring occasionally, until it turns brown and crispy. Remove half of the ham shards from the skillet and place on a paper-towel lined plate. Leave the remaining ham and any fat that has rendered in the skillet.
  2. Add the green beans, chicken stock, pepper and salt to the skillet. Reduce the heat to medium-low and simmer, stirring occasionally, until the stock reduces and darkens in color and the beans are soft but hold their shape, about 30 minutes. Pour into a serving platter and sprinkle with the reserved crispy ham.

Love these green beans! Although I can’t get country ham where I live so I just used a ham steak instead. My husband also gobbled these up and he always tells me he does not like green beans! As a matter of fact, we don’t have enough for leftovers tonight and he told me to go buy more green beans to go with our pork chops tonight! 😄Thank you for sharing the recipe Tricia!
