Tahini Honey Farro Salad

Ingredients

2 cups uncooked farro

3 tablespoons honey 

3 tablespoons extra-virgin olive oil 

3 tablespoons tahini 

2 tablespoons lemon juice 

1/2 teaspoon kosher salt 

1 teaspoon freshly ground black pepper 

4 scallions, thinly sliced 

2 tablespoons chopped fresh cilantro 

2 tablespoons chopped fresh mint 

Directions

  1. Cook the farro according to the package instructions. Set aside.
  2. Whisk the honey, olive oil, tahini, lemon juice, salt and pepper together in a large bowl. Add the farro to the bowl and toss to coat. Sprinkle in the scallions, cilantro and mint and fold in to mix. Serve immediately or chill until ready to serve.

This was tasteless. I gave it to friends and one added sautéed veggies and the other added it to soup. I will keep searching for this grain's recipes.
