Turkey Scallopini

Ingredients

Cooking oil

4 ounces turkey breast, cut into bite-sized pieces

Garlic salt

Flour, for dredging

1-ounce chopped onion

1 1/2 ounces mushrooms

1 clove garlic, minced

3 ounces turkey or chicken broth

2 ounces Marsala wine

Directions

  1. In a skillet heat a few tablespoons of cooking oil. Sprinkle the turkey breast pieces with garlic salt and then roll in the flour until coated. Brown the turkey breast pieces in the oil and then add the onion, mushrooms, and garlic. Cook a few more minutes and then drain off the excess oil. Add the broth and Marsala wine and reduce heat. Simmer until sauce thickens.

While I have not tried this recipe yet, our family has always served a fresh roasted "Willie Bird" at our Thanksgiving table since these turkeys first became available. A forerunner on the free range turkey--way ahead of the times--fresh, juicy, flavorful. Can't go wrong! Our family Thanksgiving motto, "It's a Willie Bird!!!"
