Caramel Sauce

Ingredients

2 cups sugar

1/4 cup water

1/2 cup heavy cream

Directions

  1. Combine the sugar and water in a large heavy saucepan over medium heat. Cook, swirling the pot around, until the mixture is a deep caramel color and looks like syrup, about 8 minutes. Carefully pour in the cream (it will bubble up) and continue to cook for another minute. Cool to room temperature.

With this particular recipe its perfect if your using it for candy. I use this to make chocolate turtles and it's perfect, but you do need to stir constantly and watch it closely if not it will crystallize. If you want some to go over ice cream try to read Ree Drummonds recipe for caramel because that's more of a sauce this caramel is better for candy.
