Roasted Cherry Tomatoes

Ingredients

2 pounds cherry tomatoes

3 tablespoons extra-virgin olive oil

Kosher salt and freshly ground black pepper

Directions

  1. Heat the oven to 400 degrees F.
  2. Place the tomatoes on a sheet pan, drizzle over the olive oil and season with salt and pepper. Roast until the tomatoes collapse, about 10 minutes.

Cooking With Kristina

I ended up with so many cherry tomatoes this year. Must be all the rain. This was a super simple recipe and you can do so much with these little yummies. I tried them hot from the oven and decided to finish with sherry vinegar and put them back in the oven after I turned it off. While waiting, I made some garlic toast from a loaf of sourdough I got from the bakery. Then I mixed just a smidge of herbed goat cheese with a tittle of mascarpone, and spread it on the bottom of the toast, then finished with these little tomato jewels. Yummy! lunch while working from home after I spent most of my lunch hour in the backyard garden. Thanks for this inspiration. Now what else can I put these on?
