Roasted New Potatoes

Ingredients

2 pounds red new potatoes

1/4 cup olive oil

1 tablespoon dried oregano

Salt and pepper, to taste

Directions

  1. In a large bowl, coat potatoes with oil; sprinkle with oregano, salt and pepper.
  2. Spread out on a baking sheet and bake in a 375 degree preheated oven for 30 to 40 minutes until golden.

Deliciously easy. I was out of oregano, so I modified by cubing the potatoes, added minced garlic and tossed them in a bag with olive oil. Once on the baking sheet, I seasoned with salt and pepper, fresh rosemary and Italian parsley. I served this with Tyler's Roasted Chicken. The meal was a huge hit with the family.
