Crab and Cheese Bites

  • Level: Easy
  • Yield: 2 dozen bites

This recipe is a twist on my mom’s classic crab and cheese appetizer that she would make for my dad’s poker nights. She would make a larger cheese ball, but I’m turning her recipe into an easy-to-eat appetizer. These come together quickly and are ideal for making in advance.

Ingredients

8 ounces cream cheese, at room temperature

8 ounces lump crabmeat, drained and picked through for any shells

2 tablespoons horseradish

1 tablespoon ketchup

1 teaspoon lemon zest plus 2 teaspoons lemon juice

1 teaspoon Worcestershire sauce

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

2 green onions, trimmed and chopped

Nonstick cooking spray, for greasing

1 tablespoon chopped fresh chives

1 tablespoon chopped fresh dill

Directions

  1. Add the cream cheese, crabmeat, horseradish, ketchup, lemon zest and juice, Worcestershire, salt, pepper and green onions to a mixing bowl. Use a spatula to mix the ingredients together until everything is evenly combined.
  2. Spray your hands with nonstick cooking spray. Use a tablespoon-sized scoop to scoop 1 tablespoon of the mixture into your hands and gently roll into a ball. Place on a serving platter. Repeat with the remaining mixture.
  3. Mix the chives and dill together in a small bowl. Sprinkle the herbs on top of the bites. Cover and refrigerate for 3 to 4 hours before serving.
