Vegetable Couscous Salad

A celebrated North African grain, couscous gets transformed into a refreshing summer salad with colorful produce like zucchini, tomato, mint and scallions.

Ingredients

1 box couscous

1 red onion, diced

1 tomato, seeded and diced

2 scallions, sliced

1 zucchini, diced

1/2 cup fresh mint

Juice of 1 lemon

3 tablespoons olive oil

Salt

Pepper

Directions

  1. Prepare couscous according to directions on the package. Set aside to cool. Add onion, tomato, scallions, and zucchini. Snip in mint with a kitchen scissors. Add lemon juice and olive oil. Season with salt and pepper. Serve chilled.

This is one of the best, most refreshing summer salads I've had in a very long time. Very simple, yet delicious explosion for your taste buds. The lemon and the fresh mint are the key though. <br />I had to double the recipe for a get together we had at our house, and it was gone so fast, I couldn't even get a second serving. <br />You won't regret making this salad.
