Wacky Cake

Ingredients

1 1/2 cups flour

3 tablespoons Dutch process cocoa powder

1/2 teaspoon salt

1 cup sugar

1 teaspoon baking soda

2 teaspoons vanilla

1 teaspoon white vinegar

6 tablespoons vegetable oil

1 cup cold water

Directions

  1. Preheat 350 degrees F.
  2. Place the dry ingredients in a bowl. Make 3 small holes in the mixture. Pour the vanilla in one hole, the vinegar in another and vegetable oil in another. Pour water over the top and mix. Pour into a lightly greased 8 by 8 inch pan. Bake for 30 to 35 minutes.

my mom made wacky a lot. We made it in a 8" glass pan and baked it at 325°  No mixing in another bowl. The oil in the cake keeps this a nice moist cake that doesnt stick to the pan. We frosted a bit after taking it out of the oven, not immediately.  Frequently we'd eat it in a bowl and pour milk (2% at least) on it as it makes a nice lite chocolaty milk to drink while eating the cake. mmm..
