Chopped Junior-Inspired Lunchboxes: The Cupcake Sandwich

Try a new recipe idea that will set your lunchbox apart from the rest, Chopped Junior style.

Our young contestants on this week’s episode of Chopped Junior definitely had to think outside of the box for all three challenges. That got us thinking about a new way to enjoy a classic treat like the cupcakes they had to use in the dessert round.

The cupcake sandwich caught our eye a few years ago when an intern showed us this preferred method. By cutting off the “stump” of the cupcake and using it as the top “bun,” to make a sandwich, you solve two problems: First, there are no more disproportionate bites — each one has the perfect ratio of frosting to cake — and second, you don’t have to worry about smashing all that pretty frosting when packing your lunch!
