Ingredients

  • 4 3/4 ounces all-purpose flour, approximately 1 cup
  • 4 3/4 ounces whole-wheat flour, approximately 1 cup
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 3 tablespoons sugar
  • 3 whole eggs, beaten
  • 2 ounces unsalted butter, melted
  • 16 ounces buttermilk, room temperature
  • Vegetable spray, for waffle iron

Directions

Preheat waffle iron according to manufacturer's directions.

In a medium bowl whisk together the flours, soda, baking powder, salt, and sugar. In another bowl beat together eggs and melted butter, and then add the buttermilk. Add the wet ingredients to the dry and stir until combined. Allow to rest for 5 minutes.

Ladle the recommended amount of waffle batter onto the iron according to the manufacturer's recommendations. Close iron top and cook until the waffle is golden on both sides and is easily removed from iron. Serve immediately or keep warm in a 200 degree oven until ready to serve.

    I prefer a slightly crisper waffle, but to each their own. As far as this recipe is concerned, it was quite good. They're... not labeled "Crispy Waffle" or whatever people expect them to be, but rather "Basic Waffle." That's precisely what it is. Also, who measures everything in ounces? Nobody unless they want the measurement to be accurate or live in places outside of America--where they'd use grams.Read more

    Super easy to throw together, and I loved how they turned out!! Nice flavor and texture. I made some "regular" waffles, and... some "belgian", and the regular ones seemed to turn out crispier (which I like). One weird thing. . . after letting the batter sit for 5 minutes the top looked great when I started pouring, but underneath the batter was super runny. Not sure what happened there, but they all turned out great.Read more

    These were very easy to mix up. I made some plain and added pecans to some. They were excellent... great texture, flavor,... and crispness on the outside. I don't understand how this recipe is getting bad reviews. I am wondering maybe if the recipe wasn't followed exactly or if the waffle iron being used was inferior. My batter was very thick and fluffly. I did actually weigh my dry ingredients and this may make a difference too.Read more
