Ingredients

  • 1 cup butter, plus more for greasing pan
  • 1 cup peanut butter
  • 1 teaspoon vanilla
  • 1 pound powdered sugar

Directions

Microwave butter and peanut butter for 2 minutes on high. Stir and microwave on high for 2 more minutes. Add vanilla and powdered sugar to peanut butter mixture and stir to combine with a wooden spoon. Pour into a buttered 8 by 8-inch pan lined with waxed paper. Place a second piece of waxed paper on the surface of the fudge and refrigerate until cool. Cut into 1-inch pieces and store in an airtight container for up to a week.

    this is a buckeye candy recipe

    I took the advice of several of the reviewers and reduced the powdered sugar and butter and put melted chocolate on top. ... When I tasted it I realized I had make buckeyes! Sure enough, I checked my recipe for buckeyes and it was the same, just a 1/2 tsp. of vanilla difference. Peanut butter fudge? I think not!Read more

    The fudge tasted so incredibly good! And this is coming from a person who does not like peanut butter at all!!!!!! Not even... the smell of it. That says A LOT! Looking through other comments and reviews, I made little adjustments to the recipe. I used less butter, about a 1-1 1/2 sticks. One pound of sugar is about 4 cups. I used 1/2 to 1 cup less sugar which i sifted because there seemed to be a lot of comments about the fudge being too sweet. To prevent clumps, I used an automatic mixer. Hope these tips help.     i didn't want to use a cup of butter so i used earth balance instead. ( i'm not vegan anymore but i just can't get used to... actually cooking with dairy.) but it worked just as well. next time i make this i will probably only use half a pound of confectionery sugar instead of the full pound. it's so sweet it's hard to taste the peanut butter. i also added mini chocolate chips.
