Apple Nut Bread

Ingredients
  • 1/2 cup shredded carrots
  • 1 1/3 cups applesauce
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla
  • 2 eggs
  • 3/4 cup granulated sugar
  • 2 1/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/3 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup walnut pieces
Directions

Preheat oven to 350 degrees Fahrenheit.

Combine carrots, applesauce, oil, and vanilla. Add eggs and sugar and mix together. In another bowl, mix the rest of the dry ingredients. Stir dry ingredients into applesauce mixture until blended. Do not over mix. Divide mixture into 2 greased loaf pans. Bake for 55 minutes or until done.

Over all GREAT! just as expected. I used cut up fresh red apples and put them in my Ninja blender with canola oil to make apple sauce .used half white, half wheat flour.Great with butter or even cream cheese .plus I mixed all ingredients into one bowl (dry and wet) it still came out great! . I made cupcakes in a Pampered Chef silicone pan. 20 mins (per another review) wasn't quite enough, so add 2-3 more mins. Sprinkling powdered sugar or adding cream cheese icing makes them sweeter. I was actually looking for a recipe for apple crisp when I came across this recipe and decided to give it a try. I had made some homemade applesauce and decided to use it in this recipe. Man oh man!! I was very very disappointed with this recipe.It had barely any taste and was slightly dry. I love all different types of breads, including zucchini, apple, etc. etc. but this was so bland I knew my boyfriend or I would ever eat it. I threw it out!
