Ingredients

  • 1 1/2 cup frozen blueberries
  • 3 tablespoons sugar
  • Juice of half a lemon

Directions

Combine berries, sugar and lemon juice in a saucepan and bring to a simmer. Mash some of the berries with a fork to release juices. Serve warm.

    I was craving blueberry syrup but had none on hand and with our new fresh snowfall, the store is not where I wanted to be on a Sunday morning. I found this very easy simple syrup to be great. I've tried making others that include orange juice and/or corn syrup before but they were never want I wanted them to be. Will this test like bottled syrup? No. But it's sweet and a good consistency and the lemon does not overpower. It's more of a silent partner. It was easy and I thought it good.

    We used this with the blueberry buttermilk pancakes by Cookworks and they were wonderful together. I used fresh blueberries instead of frozen. I don't think it made as much as the recipe said, but you can always make more. It was really quick!

    This is the easiest recipe and works for syrup, jam, ice cream topper, and cheesecake topper!! One of my favorites!!
