You can create up to five timers

Ingredients

  • 1 honeydew melon, halved, seeds discarded
  • 3 tablespoons freshly squeezed lime juice
  • 1/4 cup fresh mint leaves, stems discarded
  • 1/4 cup ice wine or Sauternes (optional)

Directions

Scoop out melon flesh, preserving the rind to use as serving bowls.

In a blender, puree melon, lime juice and mint.

Strain puree through a fine strainer and discard solids. Add optional ice wine, if desired. Chill for a minimum of 1 hour.

Serve in hollowed out melon halves.

    My husband was a skeptic, but we both loved this soup - SO refreshing! We has it as an appetizer for a summer meal, but it would be an excellent palette cleansing course or even a light dessert.

    I did not strain it but blended it instead to oblivion. It was heavy on mint, but in a good way. My husband does not care for wine so I didn't add the wine ice, but it was 5 stars regardless and kid friendly, too.

    Just when I had grown bored with cooking. Just when I thought there was no way to "wow" my family and friends. Along comes Bob. Bob...YOU ARE THE MAN!!!!!!! This dessert is perfect for the summer time. My mother loved it...my wife loved it...my MOTHER-IN-LAW loved it! YES!!!!!
