Ingredients
- 1 pound fresh mozzarella, sliced into 1/4-inch thick slices
- 2 ripe red tomatoes, sliced into 1/4-inch thick slices
- 2 ripe yellow tomatoes, sliced into 1/4-inch thick slices
- Basil Vinaigrette, recipe follows
- Fresh basil leaves, torn
- Salt and freshly ground pepper
Directions
Arrange the cheese and tomatoes on a platter and drizzle with the vinaigrette, to taste, and garnish with basil leaves.
Basil Vinaigrette:
- 1/2 cup fresh basil leaves
- 1/4 cup white wine vinegar
- 1 tablespoon honey
- Salt and freshly ground pepper
- 1/2 cup olive oil
Combine all ingredients and blend until smooth. Adjust seasoning with salt and pepper, to taste.

I absolutely love this dish and I am so stoked to find an easy to make basil vinaigrette recipe as well. I use the basil vinaigrette on all my salads. If you like shallots, I would add one in. It gives adds a subtle and fresh onion-like flavor and works great with the basil. Oh yeah, I don't own a food processor, so I just made a basil chiffonade and placed it over the dish. Wonderful!!!

Beautiful, simple, and delicious. Made it as a quick appetizer for my family. They loved it. The balsamic vinaigrette was delectable.
