Ingredients
- 1 can chickpeas, drained and rinsed
- teaspoon dried mint
- 1 tablespoon cider vinegar
- 1 small tomato, seeded and diced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1/2 red onion, thinly sliced
- 1 clove garlic, minced
Directions
In medium bowl combine chickpeas, tomato, onion, garlic and mint. Add vinegar and olive oil. Toss to coat. Season with salt and pepper. Chill and serve

This salad was just OK. I may try using milder onions, like Vidalias, because the red onion was just a bit too strong. I may also try using a good balsamic vinegar instead of cider vinegar. It just had a very strong, spicy "dressing" flavor that didn't complement the chickpeas well.
