Ingredients
- 2 teaspoons canola oil
- 1 medium onion, diced
- 12-ounces smoked Virginia ham, cut into [1/4]-inch cubes
- 2 cloves garlic, minced
- Two 15-ounce cans navy beans (preferably low-sodium), drained and rinsed
- One 15-ounce can crushed tomatoes (preferably low-sodium)
- 1/2 cup water
- 1/4 cup unsulfured molasses
- 1 tablespoon Dijon mustard
- 1 tablespoon cider vinegar
- 1/2 teaspoon freshly ground black pepper
- 1 recipe Green Apple and Cabbage Salad (recipe follows)
Directions
Heat the oil in a large skillet over medium-high heat. Add the onion and cook until softened and translucent, about 5 minutes. Add the ham and garlic and cook for an additional 3 minutes. Stir in the beans, crushed tomatoes, water, molasses, mustard, vinegar, and pepper. Bring to a boil, then reduce the heat to a simmer. Cover and cook until about half of the liquid is absorbed, 15 minutes.
Yield: 4 servings
Serving size: 1 1/4 cups baked beans

PERFECT recipe for healthy baked beans, Ellie! Thank you!!! I like serving baked beans with ribs and corn, but always hated serving those over processed, super salty canned baked beans. NOW, I have a tastier and more wholesome version that I can serve my family and not feel bad about eating, especially after getting off the treadmill : Thanks again, Ellie!

Very good. I enjoyed the different take on the baked bean recipe. The vinegar/dijon gave it a nice little zing. Look for a well smoked/good quality ham. I tried a cheap ham that had litte flavor (off name brand that was on sale and it made a big difference (to me. Nice change of pace and healthier than most baked beans you'll find.
