Pork Burgers

Ingredients
  • 1 pound lean ground pork
  • 1/2 cup finely chopped onions
  • 1/4 cup finely chopped green peppers
  • 1 teaspoon chopped garlic
  • 1 tablespoon Creole mustard or similar mustard
  • Essence, recipe follows
  • 4 onion buns
  • 4 slices of red onion
  • 4 slices Muenster
  • Potato chips, for garnish
  • Essence (Emeril's Creole Seasoning):
  • 2 1/2 tablespoons paprika
  • 2 tablespoons salt
  • 2 tablespoons garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne pepper
  • 1 tablespoon dried leaf oregano
  • 1 tablespoon dried thyme
Directions

Preheat grill or broiler.

In a bowl combine pork, onions, peppers, garlic, Creole mustard, and Creole spice. Form four equal patties, press them, about 1/2-inch thick. Place on the grill or under the broiler and cook for 6 to 8 minutes on each side. Toss the bun on the grill or under the broiler to toast it. Assemble the sandwich with the onions and cheese. Garnish with a handful of potato chips.

Essence (Emeril's Creole Seasoning):

Combine all ingredients thoroughly. Yield: 2/3 cup
